pretty sure I got what you want, I am offering what I am doing given
that I have very similar requirements. Not exactly same so it might not
be what you want, just posted it here since I think it might help (you
or others with similar requirements)

exactly, you could stay with whatever domain you want, just use MX
record to let Google handle the email. I.e. it would work kinda like
Eskimo spooler but better (i.e you can also get the email from there
using gmail.com web interface, pretty good spam filtering, no denial of
service on your host (cause you pull from google via IMAP), they spool
virtually unlimited amount of data etc.)

if that's a hard requirement that is definitely a deal breaker so I
guess my solution is not for you,

yeah, I just meant for that specific case, Goole does not really have
Gogole Apps free accounts anymore except for that special case described
in the link.

but yes, high availability is really hard, that's why I let Google
handle it :) Except of your dislike for Google data mining it fulfils
all your other requirements,

The other option is to figure out whether Eskimo can keep data for
you on their servers and you getting it from them using IMAP, that would
solve denial of service problem as well as access (via IMAP client) in
case your server is down. (just checked, they offer email service with
IMAP access so maybe you could use that)
