Try Postfix, http://www.postfix.org.  There are FAQs and HOWTOs for
doing this.

I've done just exactly what you've described for a number of clients.
Postfix is setup as front ends for Exchange.

Recently I've converted a client from Sendmail over to
Postfix+spamassassin.  They are very happy with the result.
