One way to do this would be to get them familiar with an
existing project, then turn them loose on a large "help
wanted" list such as: http://gnome.org/todo/index.php3  or
http://www.mozilla.org/quality/help/

That way they get a little more realistic experience of the kind of
programming work they will be doing early in their careers, their
work could end up on a CD for real users by the time their training
period is over, and other members of that project will be able to
review their code (I doubt you could criticize 300 people's work)

And they start building up a personal network of contacts, which
is the most important thing a free software person can have.
