Well, the "why" question always has levels to it, no?  They built them
because their religious and social structure so dictated -- but _why_
did they have such a social order?  A lot of that comes down to "How
can I think the way an ancient Egyptian did?", and, as I said, their
mindset was rather alien to the modern one.

As to details of construction, you're right that all the details 
have not been nailed down and never will be, because time has 
erased too much evidence.  However, plausible mechanisms for every
element of the process are on hand, methods that were eminently practical
for the ancients -- and in many cases there is specific archeological
evidence for them.  E.g., the quarries for the blocks are known, as are
physical remains of some of the construction procedures.  In short,
the general process is no longer much of a mystery.

More than the above should (obviously) go off-list.

That depends.  What exactly do you consider mysterious and desire 
information on?
