I remember finding not-difficult ways around that, but can't remember
exactly how.  Of course, you can always just remove metapackage
ubuntu-desktop (all the GNOME stuff), and then apt-get or aptitude in
what you want.  But then, that's treating Ubuntu as a funny-looking
Debian, and you might as well just go straight to Debian-testing, if you
lean that way.

Alternatively, start with Ubuntu Server, which is somwhat sparser.
